Once seen as luxury items, Italian sweet wines have fallen somewhat out of fashion and they should have not. They’re so sweet… because their fermentation process is cut short and the yeast turns all the natural sugar from the grapes into alcohol.
There are many different types of Italian sweet wines, each one having particular aromatic and organoleptic characteristics, level of sweetness, and degrees of alcohol.
Some are sparkling - like famous Asti Spumante, subtly fizzy sweet white wine Moscato d’Asti or very fragrant sweet red wine. And some others are not, like Passito wines made from dried late harvest grapes.
